Ingredients

1 cup dry roasted, unsalted peanuts

1/4 cup coarsely chopped onion

1 clove garlic

3/4 cup skim milk

2 tablespoons lemon juice

1 teaspoon soy sauce

1/4 teaspoon red chili peppers crushed

1/8 teaspoon coconut extract (optional)

Directions

Microwave Directions:

In a 1 L glass measure, combine onion, garlic and 15 mL sesame or veg oil. Microwave on High for 2 to 2-1/2 min., or until onion is tender. Add onion mixture to remaining ingredients in food processor and puree. Return peanut mixture to glass measure and cook, covered, on high for 2 to 2-1/2 min.; stir and cook on Low 3 to 4 min. longer.

To reheat just before serving, heat on Medium for 2 to 3 min.
